We opened Casa Esempio with one wood oven, twelve seats, and a stubborn belief that good food cannot be hurried.
Ten years on, our kitchen still revolves around the same olive wood fire. Our dough ferments slowly over three days in chilled cellars. Our sauces simmer until the sugars caramelize into deep, quiet complexity.
We cook the dishes we crave after a long week: crisp charred crusts, velvety burrata, handmade egg ribbons tossed in fragrant truffle butter, and desserts that taste of honest cream and burnt sugar.
